Champ's Button Mushroom Toasts

Ingredients
  • 1 lb Champ’s Button Mushrooms
  • 3 Shallots (minced)
  • 2 Tbsp Unsalted Butter
  • 2 Tbsp Virgin Olive Oil
  • ½ Cup Fresh Herbs (Thyme or Rosemary works best)
  • Salt & Pepper
  • 12 pieces Crostini or toasted Baguette rounds
Instructions
  1. Slice Champ’s Button Mushrooms.
  2. Heat butter and 1 Tbsp of olive oil in large sauté pan.
  3. Sauté mushrooms and minced shallots for 3 minutes over high heat.
  4. Add herbs, salt & pepper. Sauté for 1 minute.
  5. Place mushroom mixture on top of toasts. Drizzle with remaining olive oil. Serve.
Champ's Crimini Mushroom Sliders

Champ's Crimini Mushroom Sliders

Ingredients
  • 12 x 2 ½” Crimini Mushrooms (stems removed)
  • 4 Tbsp Extra Virgin Olive Oil
  • 12 Mini Burger Buns
  • 10 Garlic Cloves
  • 1 Cup Mayonnaise
  • Fresh Lemon or Lemon Juice
  • Salt & Pepper
Instructions
  1. Heat 3 Tbsp of olive oil in frying pan and add 12 Champ’s 2 ½” Crimini Mushrooms (streams removed) and sauté for 2 minutes.
  2. Add 1 Tsp of crushed garlic and sauté for 1 ½ minutes more. Season to taste with salt & pepper.
  3. Lightly toast the 12 mini burger bins.
  4. Spread roast garlic mayonnaise on top and bottom on mini burger buns. Place one sautéed mushroom on each and hold in place with a 3” toothpick.

Roast Garlic Mayonnaise

  1. Place 8 whole cloves of garlic in foil and drizzle 1 Tbsp of olive oil over top.
  2. Place in 350°F oven for 25 – 30 minutes. Let cool.
  3. Crush roasted garlic cloves and combine with 1 cup of mayonnaise.
  4. Season with salt, pepper and squeeze lemon juice to taste.
